    Preheat Masterbuilt Portable Smoker + Grill to 600 degrees.

    Use the 2 lbs of ground beef to form 4 round meat patties. Set aside.

    • 2 pounds 80/20 Ground Beef
    • 1 tablespoon Sea Salt
    • 1 tablespoon Black Pepper
    • 1/8 teaspoon Cinnamon

    Use the 2 lbs of ground beef to form 4 round meat patties. Set aside.

    Ingredients

    • 2 pounds 80/20 Ground Beef
    • 1 tablespoon Sea Salt
    • 1 tablespoon Black Pepper
    • 1/8 teaspoon Cinnamon

    Place a medium sized iron skillet on the preheated grill with the lid closed. Once the skillet is hot, after about 2 minutes, add bacon and onion. Cook until rendered down and slightly browned. Add Mezcal. Cook for about 2 minutes. Remove bacon and set aside. Then, remove half of the fat from the skillet. Then, add the guava paste, water, and vinegar to the remaining fat in the skillet. Mix all ingredients well, until the guava dissolves. Next, add the bacon back to the skillet. Reduce the temperature to 250 degrees, and cook for about 20 minutes, stirring occasionally. Sprinkle the jam with salt and black pepper to taste. Once done transfer to a small container and allow the jam to cool completely. You can submerge the container halfway in a bowl of ice water to speed up the cooling process.

    • 16 ounces Bacon (Cut into small cubes)
    • 1 cup Onion, Finely chopped
    • 2 ounces Mezcal, distilled alcoholic beverage
    • 1 3/4 cup Guava Paste
    • 1/4 cup Water
    • 2 tablespoons White Vinegar
    • 1 Pinch of Salt & Pepper

While the grill’s temperature is acclimating, mix 1 tablespoon salt, 1 tablespoon pepper season and ⅛ teaspoon cinnamon together. Season both sides of your meat patties with the mixture and leave at room temperature. Once the grill is preheated, cook your patties to your desired doneness. Add 2 slices of Gouda cheese to each patty and close the lid to encourage melting. Apply cheese 1 minute before removing the meat patties from the grill. Lightly toast all four buns on the grill.
