The Brisket Potato Skins are a hearty and satisfying dish combining smoky brisket and crispy potato skins. Made on the Masterbuilt Gravity Series 800, these potato skins are first cooked until tender, then seasoned and smoked for a perfectly crisp texture. They’re filled with shredded cheddar and chopped brisket, then topped with BBQ sauce, pickles, and red onions for a mix of savory, tangy, and smoky flavors. It's a perfect snack or appetizer that pairs well with a cold beer and good company.

Instructions

    Preheat smoker or oven to 400F - using an oven at this step will not modify the flavor or length of the cook

    Wash your potatoes well, then using a fork, poke holes in potatoes - about 4 on each side will do well - this will prevent the potatoes from breaking open

    Wrap each potato individually in aluminum foil

    Place wrapped potatoes into a preheated smoker or oven and cook for 1 hour

  5. 05

    Once they are done, remove them and let them cool until they are able to handle, slice potatoes lengthwise to split them into 2 parts

    Scoop out the middle of the potato with a spoon and save or discard potatoes

    Liberally apply olive oil to the entire potato, and season with BBQ rub

    Place back in the smoker for 15-20 minutes until the skin on potatoes becomes lightly crispy, but is showing no signs of burning

    Fill potato canoes with about 3/4 of a TBSP of shredded cheddar cheese, and about 1 TBSP of chopped brisket

    Bake for 5-7 minutes to melt cheese

    Remove and let cool for 10 minutes. Add your favorite BBQ Sauce, chopped pickles, and red onions.

    Slice in half again if desired, and serve!
