Memorial Day Onion Jam Bacon Cheeseburger

A delicious, celebratory summer burger to get your season of flavor started from grillmaster Rasheed Philips.

    Like all great recipes, this one starts with bacon. Cook up roughly 3 slices of bacon until crispy. Save the grease and set the bacon to the side for later.

    Thinly slice up the sweet onions and sauté in the rendered bacon fat over medium heat. Add a pinch of salt, parsley, bay leaves, and rosemary and allow to sauté for 3 to 5 minutes, or until very fragrant.

    • 1/4 Cup Extra-Virgin Olive Oil
    • 3 Large Sweet Onions, Cut into 1/4-Inch Dice
    • Salt
    • 2 Sprigs Parsley
    • 2 Bay Leaves
    • 1 Sprig Rosemary
    • 1 Tbsp Sugar
    • 1 Tbsp White Balsamic Vinegar

    Once caramelized, remove the pan from the heat and set to the side to cool.

    In a medium-sized mixing bowl, add your ground beef, two of the eggs, and all of the dry ingredients. Thoroughly mix your ground beef with the eggs and spices.

    • 3 Eggs
    • 1 Tbsp Beef Seasoning
    • 1 tsp Garlic Powder
    • ¼ tsp Garlic Salt
    • ¼ tsp Black Pepper

    Next, form 6 to 8-ounce balls of ground beef. We are making the patties this size so we can make a smashed patty.

    Using a sheet of wax paper and a paper plate or a baking sheet covered with a thin layer of cold water, firmly press down on your beef patties until evenly flat. Repeat the steps until all patties are formed.

    Load-light-set your Gravity Series 1050 Digital Charcoal Grill + Smoker to 450°F. Make sure to flip your grates to the SEAR side before lighting your grill.

    Once temperature has been reached, lay your formed beef patties onto the grill grates, evenly spacing to ensure heat surrounds all sides of the patty. Cook for roughly 5 minutes per side, or until the internal desired temperature is reached.

    Top the beef patties with your favorite kind of cheese.

    Speaking of cheese, let's make some grilled cheese buns. Coat the outside of two slices of bread per bun with a little bit of butter and the remaining leftover bacon fat, then place a slice of cheese on each slice of bread. Place on the grates and grill until the bread starts to toast and the cheese is melted. Place two slices together to form a grilled cheese bun.

    Now, it's time to build your burger. First, add a layer of onion jam on one grilled cheese bun. Place a patty, a few strips of bacon, and another patty on top of the onion jam (And if you're like me, you can't have a burger without a sunny side up egg). Then, top with your final grilled cheese bun. Cut on the diagonal and enjoy!
