Instructions

    Prepare the Ribs

  1. 01

Remove the membrane from the back of each rib rack by lifting and peeling it off with a paper towel for better grip. This step is crucial for ensuring that the rub and smoke penetrate the meat more effectively.

  2.

  3. Make the Rub

  4. 02

In a small bowl, combine the brown sugar, paprika, chipotle powder, garlic powder, onion powder, ground cumin, salt, and pepper. Mix well to create your dry rub.

  5.

  6. Apply the Rub

  7. 03

Generously apply the dry rub to both sides of the ribs, massaging it into the meat.

  8.

  9. 04

Allow the ribs to sit at room temperature for about 30 minutes before smoking to let the flavors set in.

  10. Preheat the Smoker

  11. 05

Set up your Masterbuilt Digital Charcoal Gravity Series Smoker and preheat it to 275°F (107°C).

  12. Smoke the Ribs

  13. 06

Place the ribs on the smoker rack. Close the lid and smoke for about 3 hours, spritzing with apple cider vinegar every hour to keep them moist and enhance the flavor.

  14. Wrap the Ribs

  15. 07

Tear off enough aluminum foil to wrap each rack of ribs fully. Spritz the ribs one more time with apple cider vinegar, then wrap them tightly in the foil. This will trap in moisture and tenderize the meat.

  16. 08

Return the wrapped ribs to the smoker and continue cooking for another 2 hours.

  17. Prepare the Chipotle BBQ Sauce

  18. 09

While the ribs are cooking, combine ketchup, apple cider vinegar, honey, chipotle peppers, Worcestershire sauce, smoked paprika, and garlic powder in a saucepan over medium heat.

  19. 10

While the ribs are cooking, combine ketchup, apple cider vinegar, honey, chipotle peppers, Worcestershire sauce, smoked paprika, and garlic powder in a saucepan over medium heat.

  20. 11

Simmer the sauce for about 15-20 minutes, stirring occasionally until it thickens. Season with salt and pepper to taste.

  21. Finish the Ribs

  22. 12

Remove the ribs from the foil and place them back on the smoker. Brush a generous amount of chipotle BBQ sauce over the ribs and smoke uncovered for an additional hour to set the sauce and add a final layer of flavor.

  23. Rest and Serve

  24. 13

Remove the ribs from the smoker and let them rest for about 10 minutes before slicing between the bones.

  25.

  26. 14

Serve with extra chipotle BBQ sauce on the side.

  27. Sheed's Tips

  28. 15

Removing the membrane and applying a liberal amount of rub are key steps for flavorful ribs.

  29. 16

Wrapping the ribs in foil during the cooking process (often called the "Texas crutch") helps to speed up cooking and ensures tender ribs.

  30. 17

Always keep the smoker lid closed as much as possible to maintain consistent temperatures and maximize smoke flavor
