The gremolata, inspired by one of Dave's favorite restaurants in Florida, combines zesty citrus notes with fresh herbs, adding a burst of flavor that perfectly complements the rich, smoky lamb

Instructions

    First, season your lamb heavily with salt and let it sit for about 20 minutes while you prepare your gremolata.

    In a blender add your parsley, mint, lemon and orange zest, juice from your lemon and orange, shallot, olive oil, and seasonings. Blend well and stream in some more olive oil if needed.

    Rub half of your gremolata on your salted lamb and let it marinate while you fire up your grill.

    Once your Masterbuilt smoker is set to 500F add your lamb and cook until it hits 130F internal and then let it rest for about 10-15 minutes.

    Slice in and add more of your gremolata sauce and enjoy!
