Remove the membrane from the back of each rack of ribs by sliding a knife under the membrane and lifting and pulling it away. This allows for better absorption of the spices

In a small bowl, mix together the salt, black pepper, smoked paprika, garlic powder, onion powder, and cayenne pepper. Rub this mixture evenly over both sides of the ribs.

Set up your Masterbuilt 800 Digital Charcoal Gravity Series Smoker and preheat it to 265°F.

Place the spareribs directly on the grill grates. Close the lid and smoke the ribs until they are very tender and the meat pulls away from the bones, about 4-6 hours. Check occasionally, maintaining the smoker temperature by adjusting the vents.

In a saucepan over medium heat, combine the ketchup, whiskey, apple cider vinegar, brown sugar, honey, Worcestershire sauce, smoked paprika, garlic powder, and onion powder.
