This recipe uses a Blue Cheese spread that is made from a blend of creamy blue cheese and complementary ingredients. The spread melts perfectly over the hot, freshly smashed patty, creating a subtle tangy sauce at every bite. This spread ensures an even distribution of blue cheese flavor, avoiding the overpowering chunks that can sometimes dominate a burger. Preheat your griddle over medium-high heat until it's hot.

Make the blue cheese spread by folding the ingredients together. The bite and acidity from the garlic is really going to come through and play well with the blue cheese on these burgers.

Divide the ground beef into portions, about 1/4 pound each. Roll each portion into a loose ball

Season one side of each ball with salt and pepper.

Place a ball of beef onto the hot griddle, seasoned side down.

Use a sturdy spatula or a burger press to firmly smash the beef ball down onto the griddle. Press down until the patty is thin, about 1/4 inch thick. This smashing process helps create a crispy crust.

Season the top side of the patty with salt and pepper

Allow the patty to cook for about 2-3 minutes until the edges start to turn brown and crispy.

Place bacon and onions on griddle as desired (optional)

Flip the patty using the spatula and cook for another 1-2 minutes.

If desired, place a slice of American cheese on top of the patty during the last minute of cooking and allow it to melt

Remove the patty from the griddle and let it rest for a minute.

Repeat the process with the remaining portions of ground beef

While the patties are resting, lightly toast the hamburger buns on the griddle.
