Roadside Chipotle Ribs
Enjoy this spicy and tangy smoked ribs recipe made on the AutoIgnite Grill & Smoker by Ambassador Nick "Heatstroke" Keith.
"My wife’s family is from Mexico, from the state of Jalisco. Her family owns a chicken stand out there where they sell “Roadside” chicken which is heavy on the chipotle flavor.
We obtained their recipe for the marinade and started applying to numerous American style BBQed meats, my favorite being pork. The flavor the pork takes on is absolutely incredible, and although I’m going to outline ribs for this recipe, pulled pork made with the same sauce is absolutely fantastic." - Nick
Smoked ribs on the AutoIgnite is a great way to experience superior charcoal flavor from any style of meat.
Instructions

Boil dried chilis with garlic cloves until the chilis get soft

Let this cool then blend with the rest of the ingredients

Place about 1/2c of the water used to boil in the blender to help make it a paste

Smoke ribs for about 2 hours at 300 degrees with a non-sweet BBQ rub

Remove and wrap with some butter and half of the chipotle sauce

Place back on smoker for another hour

Remove from foil and put more sauce on the ribs and let it tack on which will take about 15 minutes
