Take your BLT up a notch with these smoky, crispy BLT Tacos made on the Gravity Series® 1150 Digital Charcoal Grill and Smoker. Smoked thick-cut bacon, fresh lettuce, juicy tomatoes, and chipotle mayo come together in a warm, grilled tortilla for the perfect bite. Simple, bold, and packed with wood-fired flavor!

Instructions

    Slice your pork belly into thick cut slices of bacon, then add it to a Ziploc bag with a healthy amount of salt.

    Make your bacon marinade by combining salt, garlic powder, paprika, and maple syrup. Mix well then add to your bacon.

    Fire up your Gravity Series smoker to 275°F and smoke your bacon for about an hour. Once your bacon ready, get a cast-iron pan, hot and sear bacon till nice and crispy.

    Make your sauce by combining sour cream, mayo, roasted garlic, cilantro, red wine, vinegar, lime, salt, and of course, your bacon fat

    Once your bacon is ready, and your sauce is made build your taco with your tortilla, sauce, bacon, chopped lettuce, chopped tomato, and enjoy!
