The day before the cook, , clean and separate the wings into wingettes and drumettes. Place them in a freezer bag overnight with one bottle of Italian dressing.

On the day of the cook, give the wings a quick rinse in a colander to remove excess dressing. Place the wings in a clean freezer bag and add a liberal amount of your favorite rub. Toss to coat all wings.

To cook, put the wings in the smoker on high heat, 300-325°F. Cook the wings for 1-1½ hours.
