Place in your smoker at 250* and make sure you use Jealous Devil Wood Block on your coals to get extra flavor

Remove meat when comes to internal temp of 105* then bump up the heat and sear on all sides until reaching an internal temp of 125*. Remove and let rest until it comes up to the perfect medium rare.
