Preheat your smoker or oven to 250°F.

Trim any hard fat, loose fat, and silver skin from the eye of round.

Tie or truss the meat to help it maintain its shape while cooking.

Coat all sides of the beef with olive oil as a binder.

Liberally season with your favorite beef rub or seasoning

Place the beef on the smoker and cook until it reaches an internal temperature of 125°F.

Once cooked, remove the beef from the smoker and let it rest at room temperature for 20-30 minutes.

Increase the smoker or oven temperature to 375°F.

Thinly slice the rested beef and set it aside.

Brush the tops of the buns with melted butter and sprinkle with everything seasoning.

Slice the slider rolls in half and stack them with sliced beef on the bottom layer of bread, followed by a layer of cheddar cheese and a drizzle of BBQ sauce on the top layer of bread.

Place the assembled sliders back into the smoker or oven and cook for approximately 5 minutes, or until the cheese is melted and the buns are golden. If the tops of the buns begin to brown too quickly, cover them with foil.
