    Trim the fat, oxidized meat, and silver skin off the brisket.

    Season with your favorite SPG rub and barbecue rub.

    Set your smoker to 275°F.

    Place the brisket in the smoker. When the brisket reaches an internal temperature of 165°F, wrap it in foil and return it to the smoker.

    Continue cooking until the internal temperature reaches 205°F, the total cook time should take about 6 hours.

    Once done, let it rest before slicing.

    Cut russet potatoes into roughly ½ inch fries.
