These meatloaf minis were smoked on a Gravity Series charcoal grill and smoker.

Set Gravity Series Grill + Smoker to 275˚F and add wood chunks.

When your grill is heated up, prepare your peppers, onions, and garlic by sautéing them over medium heat with olive oil until soft.

- 2 cups onion, finely chopped
- 2 cups green pepper, finely chopped
- 2 teaspoons minced garlic
- 2 tablespoons extra virgin olive oil

Place peppers, onions, and garlic in large mixing bowl and add the beef and sausage.

- 2 pounds lean ground beef
- 1 pound Italian sausage

Then top the meat mixture with BBQ sauce, breadcrumbs, eggs, salt, pepper, and cayenne pepper.

- 2 eggs, lightly beaten
- 1 teaspoon kosher salt
- 1 teaspoon black pepper
- 1/2 teaspoon cayenne pepper

Mix ingredients together.

Once combined evenly, form mixture into 4 small meatloafs.

Add aluminum pan to cooking grates with wire rack on top. This will allow your meat to receive the most smoke. Add meatloaf logs to top of wire rack.

Coat with another layer of BBQ sauce.

Smoke for 2 hours until internal temperature reaches 160˚F. Lightly brush the top of each meatloaf with BBQ sauce every 30 minutes while smoking.
