The Santa Fe Tuna Roll is a fresh and bold dish that’s perfect for grilling on the AutoIgnite™ Series 545 Digital Charcoal Grill and Smoker. The tuna gets a smoky char while staying tender, creating a delicious contrast with creamy and crisp fillings. It’s a quick, flavorful recipe that’s sure to impress at your next cookout.

Instructions

    Light & stabilize grill to 400°F. Place a wood chunk in the hopper.

    Season the tuna steak with blackening seasoning & smear with wasabi. Oil the sear plate and sear the tuna for 10 seconds each side.

    Remove the tuna and allow to rest. Place the cream cheese in a grill-safe container & smoke for 5 minutes on the grill. Mix the black bean puree and set aside.

    Lay out tortilla. Generously smear black bean cream cheese one-third of the way across tortilla while sprinkling cheese on either side of the line.

    Place seared tuna on other side of tortilla & line with sliced avocado, spinach, roasted pepper & pickled ginger.

    Roll tight (like a sushi roll) toward the cream cheese line. Place the roll seam side down on the sear plate for 1 minute for finishing sear.

    Remove & slice into ¾-inch rolls. Plate & enjoy!
