Instructions

    Prepare the Ribs

  1. 01

Remove the membrane from the back of each rack of ribs by sliding a knife under the membrane and lifting and pulling it away. This allows for better absorption of the spices

  2.

  3. 02

In a small bowl, mix together the salt, black pepper, smoked paprika, garlic powder, onion powder, and cayenne pepper. Rub this mixture evenly over both sides of the ribs.

  4.

  5. Preheat the Smoker

  6. 03

Set up your Masterbuilt 800 Digital Charcoal Gravity Series Smoker and preheat it to 265°F.

  7. Smoke the Ribs

  8. 04

Place the spareribs directly on the grill grates. Close the lid and smoke the ribs until they are very tender and the meat pulls away from the bones, about 4-6 hours. Check occasionally, maintaining the smoker temperature by adjusting the vents.

  9. Prepare the Whiskey BBQ Sauce

  10. 05

In a saucepan over medium heat, combine the ketchup, whiskey, apple cider vinegar, brown sugar, honey, Worcestershire sauce, smoked paprika, garlic powder, and onion powder.

  11. 06

Bring to a simmer, stirring frequently to prevent burning. Reduce the heat to low and continue to simmer for 15-20 minutes, or until the sauce thickens slightly. Season with salt and pepper to taste. Let the sauce cool slightly; it will thicken as it cools.

  12. Glaze the Ribs

  13. 07

In the last 30 minutes of cooking, generously brush the ribs with the whiskey BBQ sauce every 10 minutes, allowing the sauce to caramelize and form a sticky coating on the ribs.

  14. Rest & Serve

  15. 08

Remove the ribs from the smoker and let them rest for about 10 minutes. This allows the juices to redistribute through the meat, making the ribs juicier. Slice the ribs between the bones and serve with additional whiskey BBQ sauce on the side.

  16. Sheed's Tips

  17. 09

Applying a dry rub to the ribs the night before and letting them marinate overnight in the refrigerator can enhance the depth of flavor.

  18. 10

Keep a water pan in the smoker to help maintain moisture during the long cooking process.

  19. 11

Experiment with the type of whiskey you use in the BBQ sauce to slightly alter the flavor profile. A smokier whiskey can add a deeper dimension to the sauce.

MASTER IT.

There's an app for that.
