Season your Smoker
Before using your smoker for the first time, it's essential to complete a pre-seasoning process to ensure optimal performance. During this process, you might notice some smoke, which is entirely normal.
- Make sure the water bowl is in place WITHOUT WATER.
- Set temperature to 275°F (135°C) and run smoker for 3 hours.
- Add 1/2 cup of wood chips to the wood chip loader during the last 45 minutes to complete pre-seasoning.
- Shut down and allow to cool.
Starting up your Smoker
To achieve the best results and enhance the flavor of your food when using your smoker, it's important to correctly use and manage the wood chips. Follow these steps to ensure optimal performance and safety:
- Ensure the wood chip loader and wood chip tray are in place before using the smoker. This minimizes the chance of wood flare-ups.
- Use wood chips to produce smoke and create the desired smoke flavor. Never use wood chunks or wood pellets.
- Before starting the smoker, place ½ cup of wood chips in the chip loader. Do not use more than 1/2 cup at a time.
- Insert the wood chip loader into the smoker, making sure the wood chips are level with the top rim of the loader.
- Turn the handle clockwise in the direction of the arrow mark on the smoker to unload the wood chips into the wood chip tray. Turn the handle counterclockwise to the upright position and leave the wood chip loader in place.
- If the wood chips do not smoke on the low setting, increase the temperature to 275°F. After 8 to 10 minutes, or when the wood chips begin to smolder, reduce the temperature to the desired low setting.
- You may use dry or pre-soaked wood chips. Dry chips burn faster and produce more intense smoke, while pre-soaked chips burn slower and produce a less intense smoke.
- Periodically check the wood chip tray to see if the wood has burned down and add more chips as needed.
- Do not leave old ashes in the wood chip tray. Once the ashes are cold, empty the tray. Clean the tray before and after each use to prevent ash buildup.
Clean and Storage after Smoking
Proper maintenance of your smoker is crucial for ensuring its longevity and preventing issues like mold and mildew. Always make sure the smoker is cool to the touch before beginning any cleaning or storage procedures. Here are the steps to follow:
- Be sure to clean your smoker after each use to extend its life and prevent mold and mildew.
- Use mild dish detergent to clean the rack supports, racks, water bowl, and drip pan. Rinse and dry these parts thoroughly.
- Clean the wood chip tray and wood chip loader frequently to remove ash buildup, residue, and dust.
- Dispose of cold ashes by placing them in aluminum foil, soaking with water, and discarding in a non-combustible container.
- Wipe down the interior, the glass in the door (if featured), and the exterior of the smoker with a damp cloth. Do not use a cleaning agent. Make sure to dry thoroughly.
- After cleaning, store the smoker in a covered and dry area.
- Periodically check your smoker to avoid possible rust and corrosion due to moisture buildup.
